Beetroot, ORRIJAFFA Mandarin with Feta cheese and avocado salad
Nutritious and Delicious salad
3 medium cooked red beets, chopped into bite-sized pieces
3-4 ORRIJAFFA® Mandarin peeled and split to segments
1 small washed Roman lettuce
100 gr Feta cheese crumbled
1 ripe and firm avocado cut to 1X1cm squares
1 tablespoon Dijon mustard
1 tablespoons white wine vinegar
2 tablespoon juice of fresh ORRIJAFFA® mandarin
1 teaspoon honey
2 tablespoons extra virgin olive oil
A pinch of sea salt and a few grinds of fresh cracked black pepper, to taste
1/2 red onion thinly sliced
For the dressing: Measure the Dijon, white wine vinegar, ORRIJAFFA mandarin juice, and honey in a small bowl and whisk to combine. Then, slowly drizzle in the olive oil while whisking to incorporate with other ingredients.
Add the sliced red onion to the dressing, and toss to coat. Then add the lettuce to the bowl, and toss well.
To serve: Place dressed greens on a plate or in a shallow bowl. Using a spoon, sprinkle red beets on top of the greens. If using other, lighter colored beets, sprinkle those on top of the red beets to avoid staining. Finish with segments of ORRIJAFFA mandarin, cubed avocado and “crumbles” of Feta cheese – and enjoy!
