Orri Jaffa mandarin Salad with Beets, Avocado and Feta

Ingredients

  • 1 tbsp Dijon mustard
  • 1 tbsp white wine vinegar
  • 2 tbsps freshly squeezed Orri Jaffa mandarin juice
  • 1 tbsp honey
  • 2 tbsps extra virgin olive oil
  • Pinch of sea salt and a few grinds of black pepper
  • 1/2 red onion, thinly sliced
  • 6 cups baby arugula or shredded romaine lettuce
  • 3 medium cooked red beets, chopped into bite-sized pieces
  • 3-4 Orri Jaffa mandarins, peeled and divided into segments
  • 1/2 cup crumbled Feta cheese
  • 1 ripe and firm avocado, cubed
