Orri Jaffa mandarin Salad with Beets, Avocado and Feta
Ingredients
- 1 tbsp Dijon mustard
- 1 tbsp white wine vinegar
- 2 tbsps freshly squeezed Orri Jaffa mandarin juice
- 1 tbsp honey
- 2 tbsps extra virgin olive oil
- Pinch of sea salt and a few grinds of black pepper
- 1/2 red onion, thinly sliced
- 6 cups baby arugula or shredded romaine lettuce
- 3 medium cooked red beets, chopped into bite-sized pieces
- 3-4 Orri Jaffa mandarins, peeled and divided into segments
- 1/2 cup crumbled Feta cheese
- 1 ripe and firm avocado, cubed
